Healthy No Bake Energy Bites

I’m a big snacker; always have been, always will be. I know that’s not great for my metabolism, but it is what it is. Sure, sometimes it’s because breakfast wasn’t filling, but truly, a lot of the time it’s that I just need my day to scoot along a little bit, especially at work. You know what I’m talking about, those 10:30 am / 1:30 pm blues where you just need a quick little pick me up to find the motivation to keep going?

My job invented that feeling.

The trick is finding substantial snacks that satiate your hunger / boredom / work sorrows, but also provide nutrients for your body. Bonus points will be awarded for ease of access.

If this sounds enticing in any way, then I’ve certainly found the recipe for you. Now I’m not taking credit for this recipe, I stole it from the back of my Trader Joe’s Ground Flaxseed Meal bag, but I feel confident that I’ve finally fine tuned it enough to share it with the world.

Healthy No Bake Energy Bites
Prep Time: 10 minutes
Set Time: 60 minutes
Total Time: 70 minutes
Yields: 8-9 energy bites

  • 1 Cup Rolled Oats
  • ½ Cup Dark Chocolate Chips
  • ½ Cup Ground Flaxseed Meal
  • ½ Crunchy Almond Butter
  • ⅓ Cup Honey
  • 1 TSP Vanilla Extract

Combine all ingredients in a bowl. Use your hands to roll into 1 inch balls. Arrange on a cookie sheet or plate and freeze until set; about one hour.

I bought into the idea of energy bites, because I’m not a big coffee drinker. Waking up is tough in the morning, but staying awake is the real struggle of my life. Having a quick “bite” to tie me over sounded like a dream if I ever heard one and I was anxious to to find the perfect recipe.

Initially, I scoured Pinterest for the perfect recipe but didn’t find much that I could try with ingredients I already had. Then, like a gift from God, I turned over the bag of Trader Joe’s Organic Flaxseed Meal and found the easiest recipe for no bake energy bites that required no additional ingredients. I thought of it as a sign.

Although the original recipe allows for some creativity by way of ingredient options, I’ve found this to be the best culmination. The dark chocolate chips are healthier for you while still adding a nice crunch of sweetness, and I’ve convinced myself honey is healthier than maple syrup, but who knows really; I’m no nutritionist.

Since that fateful day, I’ve made this recipe probably a dozen times over again and I love it every time. It’s in hit among my coworkers, family, and friends, and the best part is that it truly does curb your cravings. If you’re hungry, almond butter and oats contain a high amount of healthy fats that will sustain you until your next meal. If you’re craving sweets, the dark chocolate chips and honey will surely hit the spot. And, if you’re bored, well this will give you about two minutes worth of stimulation.
