Do you love a good creamy broccoli cheddar soup? Of course you do.
Do you love all the calories and ingredients that deep down in your heart you know you probably should be having? Of course you don’t.
But did your girl find a super quick and easy alternative for you?
BUUUUUT I did find one that comes pretty darn close and takes less than an hour to prep. And that’ll just have to do friends.
Now I’m not a brilliant mastermind in the kitchen; I tie my apron one loop at a time just like everyone else. But I can follow a recipe with the best of them and that’s exactly what I did when I found this cheesy vegan broccoli soup by 40 Aprons.
This recipe calls for 17 total ingredients, more than half of which I can personally guarantee you already have in your home which makes this all that much easier. I will mention that I opted out of the mustard powder and parsley, but if have those ingredients taking up counter space then you just go ahead and add them, darling.
Now the thing that took the most time for me was prepping all the ingredients, specifically shredding the carrots. If you have pre-prepped ingredients, this recipe is pretty straight forward.
It’s worth noting that this wasn’t my favorite meal at first. Eating it from the pot was like a 6/10 due to how grainy the texture was. However, heated up the next day for lunch easily boosted it 2-3 points in my opinion. The graininess calmed down a bit after settling and made it much more tasty. It’s because of this that I’d make this recipe again.
Anyway, if you’re looking for some good old fashioned comfort food on a caloric budget, I’d definitely recommend giving this recipe a try. You *probably* won’t be disappointed.
